This morning I made pumpkin muffin because my mixer is broken and we are out of bread;) Since it is snowing I am too lazy to go out and get some bread.
Voila....the healthy pumpkin muffin, no mixer needed and they will be good enough for lunch today!
Ingredients:
15 oz pumpkin (in a can)
2 cup flour
1/2 cup raisin
1/3 cup water
2 tsp nutmeg
1 tsp baking soda
8 oz honey (you may subtitute with brown sugar)
Instructions:
Mix all ingredients, water should be added last so you could get the feel if you need more or less.
Preheat oven to 375F and bake for 20 minutes, this makes 14 muffins, yeah...

Yes! They are delicious...I can't believe we almost gave some away to the neighbors. But all is safe because they had bananna muffins so they had no room for ours. I think I would take the unusual pumkin over everyday bananna.
